I LOVE granola. Let me be more specific. I love GOOD granola. This one is insane. My foodie neighbor Mary Beth posted this recently and I will take any recommendation she has on food. She said it was the best granola. She might be right. I could eat it by the fistful…well I am eating it by the fistful. I needed a go-to granola in my life. This is the one. The base is solid, you can get creative by playing with your nuts a bit, maybe pecans, maybe walnuts…you will figure It out. Also, feel free to vary the dried fruit you stir in.

INGREDIENTS
3 cups old-fashioned rolled oats
1 ½ cups pistachios
1 cup raw pumpkin seeds
1 cup coconut chips or flakes
¾ cup maple syrup (I used a little spicy maple)
½ cup extra virgin olive oil
½ cup packed light brown sugar
1 teaspoon kosher salt
½ teaspoon ground cinnamon
1 teaspoon ground cardamom
¾ cup chopped dried apricots (only had Turkish in my pantry - any dried apricot or fruit will do)
Variations - play with your nuts, change it up as you feel. Also change up your fruit if desired
Preheat oven to 300 degrees. In a large bowl, combine oats, pistachios, pumpkin seeds, coconut, maple syrup, olive oil, brown sugar, salt, cinnamon and cardamom (no dried fruits at this point). Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stirring every 10 minutes, until golden brown and well toasted.
Transfer granola to a large bowl and add apricots, tossing to combine.
